Almond Butter Oatmeal Chocolate Chip Cookies


1 stick unsalted grass-fed butter, softened

1 cup raw coconut sugar

1/2 cup raw almond butter

1 large egg

1  cup oat flour

1 1/2 cups Oatmeal

3/4 teaspoon baking soda

1/2 cup semi chocolate chips

1/2 teaspoon pink Himalayan salt

Directions: preheat oven to 350 degree F. Line 2 baking sheets with parchment paper. Using a mixer, cream together butter, sugar, & almond butter until fluffy. Add the egg & mix to combine. In a separate bowl, mix flour, baking soda, oats & salt with a spoon. Add the dry ingredients to the wet ingredients & mix well. Then add the chocolate chips. Spoon tablespoon-size balls onto the prepared baking sheets, keeping a little distance between each ball. Bake for 10 minutes, or until golden brown. The cookies are thin, so keep a close eye on them so they don’t burn. Makes 24 cookies.



13 Month Update on Toots!

I think we have taken a path towards toddler stage! She is turning into an independent little sassy thing that won’t take NO for an answer lol. She has come so far in the past 13 months it’s literally insane here are some recent updates…

Walking: She is currently running and running away from me! She hates her diaper changed so I have to chase her and catch her to get the job over with she’s such a toot! She sometimes crawls if she is getting lazy but for the most part she is on the go!

Eating: She is doing so well with her eating she will only eat what I am having so she likes to make sure our plates look alike otherwise she is not going to eat it. Macaroni and cheese is still her favorite I always be sure to add peas, or carrots or something to get her some veggies as well.

Drinking: The bottles are all put up in the closet, she is only using that Think Baby cup these days I JUST ordered 2 more on Amazon. She is getting whole milk I was using Horizon organic milk till I came across this Lazy Meadow Whole Milk from Whole Foods it is seriously the best thing I have ever tasted it taste just like real milk no watered down over pasteurized crap. Layla goes through 2-3 10oz bottles of that a day and loves it I highly recommend it.  Its exclusive to Whole Foods $4.99 for a half gallon


Sleeping: Since she has been teething her molars it has not been full nights sleep she normally wakes up around 3:30am screaming crying for me or for milk but I refuse to start that so I usually ignore her unless I know she’s sick or something is wrong. I took her to the dentist he said about a month longer of this behavior …whomp whomp ;o(

Clothing: She is still in 6-12 stuff nothing bigger nothing smaller. She is in size 3 shoes and diapers. Her hair is getting so long I can start putting it into a pony which is fun, but she is in a I hate bow stage right now so that stinks!

Traveling: This past week I took her home to Dallas and it was a nightmare, she was off on her nap and sleep and eating schedule plus she had a sinus infection from her eye surgery because she has that stink in her eye and nose and its not letting anything get through so she has been sick! Also her molars and a ear infection don’t help much either! She did pretty good on the way there her and I flew alone I though it was ok it could of been worse, but coming home was a freaking NIGHTMARE our flight was at 7:20 got delayed she was beyond tired and sick and was not having any of it! The airport was packed, security was horrible, it sucked. We got on the plane and she started screaming bloody murder till we landed 50 minutes later I was on the verge or tears and beyond embarrassed. I am glad were home and working on getting back to our schedule and lets so I don’t plan on flying with her for a lonnnnggggggg time.

12.5 Month Update

I know your probably thinking why am I doing a half month old update…well a lot has happened in 2 weeks I thought I would share.

First off we went to the dentist this week because she has been teething so horribly that I wanted to get the scoop on what was going on in her little mouth. Well I was right she has 4 front top ones and 4 bottom ones in and then 4 molars are trying to push through. She has not slept well, her eating has gone down, she has been attached at my leg for 3 weeks now, she won’t let me put her down and she only wants me no one else ;o( UPDATE after her surgery she has been 100% better about all this! Its like she feels better all of a sudden  and is back to her normal happy, sweet, playful self..thank goodness. She is back to playing on her own and not being as needy!

Second we got rid of all her bottles! Big girl now! I literally went to the store and bought one of each bottle from each brand because I wasnt sure which one she would like. I got the Nuk one which she loves, Zoli with the straw and flip lid and Think Baby which she also loves! All the rest are put up in the cabinet because she does not like them yet. The list of not likes is the Nuby, Camelback, the spoutless one from Target and nuby with the straw. I highly suggest if you are trying to switch to go with the Think Baby and the Nuk! Layla uses straws and someone asked me how we got her to do that we started that one day when Dustin was drinking OJ and he got a straw out and bird fed her with the straw, then eventually that evolved into her drinking her own oj from a straw. But my tip would be show them how to suck it with a straw and make lots of stupid noises like how good it is and it might peek their interest to try it on their own.


Lastly, we are actually heading to the Dell Children’s hospital in Austin because she has a clogged tear duct in her left eye that she was born with. They have to put her under to do the surgery and they take a needle and poke a hole to open it up and put a stint in it. The surgery should take 10 minutes and then they will release her not sure if we will stay the night or drive back its TBD.

We are back and surgery went great! She is doing so good and acting like nothing happened so we are very pleased with it and glad it is over!

Layla 1st Birthday Party

We had 2 birthday parties for Layla this past month and it was so surreal to think of her as a toddler now! She had so much fun and so many people we loved showed up which was so nice!! The photos below are from her Dallas party there were so many old friends and now their kids there, lots of family it was perfection! We had sooo much food and the best cake ever from Susie’s cakes. Here is all the information about where I got everything if anyone was interested! The cookies I ordered from Haley’s cakes in Austin, and the macaroons were from Costco! I had the care topper custom made by Charlie Closet on instagram. The table clothes, and banner from Amazon. I had her sign with all her little information on it like height and 1st words made on Easy. Her outfit was from Dollcake Vintage I found on  Instagram. We had Stir cafe cater the food it was mini crab cakes, and spinach artichoke dip I highly recommend using them it was out of this world good, also Chick Fla for the kids!
