These little balls of joy are my go to snack! They are packed full of great stuff like rolled oats, almond butter and cranberries! I make a large batch on Sunday and store them in the fridge and eat 1-2 a day for the next week when I get the urge for a mid day snack.
Ingredients:
1/4 cup honey
1/4 cup almond butter or peanut butter
1 teaspoon vanilla extract
1 3/4 cups rolled oats
1/2 cup dried cranberries
Instructions
- Heat the honey and peanut butter in a small saucepan until melted and creamy. Stir in the vanilla. Pour over the oats and cranberries in a bowl. Stir until everything is coated.
- Press the mixture very firmly into an 8×8 pan that has been sprayed with non stick spray. Let it cool completely. Cut into 16 even bars. Eat this way or squeeze each bar tightly in your fist to a round granola bite. Makes 16 granola bites. Store in a sealed container in the fridge.
