Energy Ball Snacks

These little balls of joy are my go to snack! They are packed full of great stuff like rolled oats, almond butter and cranberries! I make a large batch on Sunday and store them in the fridge and eat 1-2 a day for the next week when I get the urge for a mid day snack.

Ingredients:

1/4 cup honey
1/4 cup almond butter or peanut butter
1 teaspoon vanilla extract
1 3/4 cups rolled oats
1/2 cup dried cranberries

Instructions

  1. Heat the honey and peanut butter in a small saucepan until melted and creamy. Stir in the vanilla. Pour over the oats and cranberries in a bowl. Stir until everything is coated.
  2. Press the mixture very firmly into an 8×8 pan that has been sprayed with non stick spray. Let it cool completely. Cut into 16 even bars. Eat this way or squeeze each bar tightly in your fist to a round granola bite. Makes 16 granola bites. Store in a sealed container in the fridge.

Wow! This is absolutely amazing. Almond butter is one of the loves of my life – I honestly don’t know how people can live without it. I really want to give your recipe a shot this weekend and will absolutely let you know how it turns out if I do. So glad I discovered your site! Love your blog, your photos, and your writing style. 🙂 I can’t wait to see more recipes in the future!
